Saffron is the most valuable spice in the world. Cultivation started in France during the 13th century, introduced by the Middle-East pilgrims, merchants and knights. High labour costs have led to the production of only the highest quality saffron.
The sowing, by hand, takes place in the months of June and July, with harvesting happening in October to early November, always from dawn till 10 am as the rose of saffron should stay the least possible time in the light not to loose color or aroma.
Stigmas of the gathered flowers are roasted to remove moisture, thereby reducing to 1/5 of their original size. It takes around 150 flowers to produce only 1 gr of saffron, which trades for around 38 euros, about the same price than gold!
